Almost forgot to tell you about my exciting find today, in Boulder. I have been looking for these watches since September! The band is rubber—classy look but lightweight which I love. True story: the lady at the story gushed about how Sandra Bullock wore one of these watches in the Blind Side. Guess that makes me cool by association?

Well, if you need to know the time…ask this girl. :)
Today was filled with many things that I love: time with J, some tastes of home (Culvers, Caribou Coffee), and time up in the mountains. It is always fun to spend time with J, but any day with Culvers and Caribou—which are both few and far between in Colorado—makes this girl extremely happy.
After our stops at the C shops, We spent some time in downtown Boulder, and then made our way up Boulder Creek Canyon. It was strangely cloudy today but we had fun taking in the mountains anyway—I’m sure we were a pretty comical sight trying to master our new camera’s self-timer. From there we went exploring and ended up in Four Mile Canyon, where we stared in awe at the devastating views of fire damage. Simply amazing to see the strange paths the fire took. Totally unpredictable. Such a scary thing. There were foundations left over from burned down houses and then right next door there were houses in bustling with every day activities. Untouched. Humans truly are resilient.
Overall it was a great day. To top it all off J made me dinner. Talk about a super husband! Taco Rotini. Yum.
I spent my day off being productive—shopping at costco and the grocery store mean that our fridge and pantry are now full! Woo hoo. Best part of the day and the reason my husband called me a genius…
I welcomed him home with these yummy morsels, but made with chocolate candy coating instead. *unintentional decision at King Soops that turned out yummy! I call them Oreo Fluff Bites! :)
Oreo Fluff Bites, adapted from www.bakerella.com by a cooking blogger, here.
1 16 oz package Nutterbutters or Oreos1 8 ounce package cream cheese, softened1 14 ounce package candy melts
1. Set aside 6 cookies.
2. Chop up the rest of the cookies with a chopper, food processor, or blender until mostly crumbs.
3. Put crumbs and cream cheese in bowl and mix until completely combined.
4. Form dough into one inch balls
5. Melt candy in microwave in 30 second increments, stirring in between each heating, until melted.
6. Coat each ball in candy and place on cookie sheet covered in wax paper.
7. Chill in refrigerator until candy is hardened.
8. Do what you will with those 6 extra cookies.
Home resting up after my little car accident and I stumbled upon this fun idea! I’ve been wanting a new scarf and now I don’t even need to go buy one! I love opportunities to be crafty.
Have five minutes to spare? Grab an old t-shirt (I used one from my ‘09 college homecoming) and a pair of scissors. Cut off the bottom horizontal seem and throw it away. Now cute horizontal strips in varying widths (around 1 inch) all the way up to the arm pit. Stretch all the strips you have cut and they should roll up.
